Being that I live basically next door to Publix, I started writing up meal plans for the week so i only grocery shop once a week (sometimes I go back for a thing or two- but i basically get the bulk shopping done all in one trip). It helps with saving some $$. Another little thing I do to save is buy our meat at Costco. It’s alot cheaper to buy in bulk- I always have big bag of chicken in the freezer so that I can pull out what I need each day. We also buy the 6 lb thing of ground beef and break it up into 1 lb increments and ziplock them so it’s easy to pull out of the freezer when I need it.
So without further adou, here’s my meal Plan for this Week (Yes, I know I’m late at posting this- but better late than never):
Sunday: I usually do my grocery shopping for the week on Sunday’s and I try to make something that will be good for left-overs for lunch the next few days. This week I made Home-made Lasagna and Garlic Bread.
Monday: SAL’s Pizza and Homemade Caesar Salad w/ the Kesler’s
Tuesday: Ritz Cracker Chicken (this is one of Mikes fav’s and SOOOO easy)! I came up with it in college- Butterfly and pound out chicken breasts- Salt & pepper them… Then make an assembly Line and dip them in Ranch Dressing (covering both sides well), then coat them real good with crushed up Ritz Crackers. Spray a Pyrex dish and then bake for 35-45 minutes at 350 degrees. Super Easy and SOOOO good! Try it… I served it with stuffed baked squash, but you can really use any sides you want- salad, oven fries…etc!
Wednesday: Teryaki Chicken & Pineapple Skewers served w/ Coconut Rice (Not really a recipe… i kinda just do it) Marinate the chicken cubes in sesame teryaki, olive oil, garlic salt, onion powder, pepper (whatever i feel like), then i skewer it alternating w/ fresh pineapple cubes… throw it on the grill (well, Mike does this part), and I make the coconut rice while he’s grilling.
Thursday: Either left-overs or we’ll be eating out w/ my mom.
Friday: Nutramedix Christmas Party- so I don’t have to cook!!
Saturday: Bible Study Christmas Party… I’m making Pigs-in-a blanket and Spinach Dip– it’s Hors’ devours style!
