Menu Plan Monday

I joined the “Official” Menu Plan Monday instead of just posting it on my page… for more menu plans check out
Monday: Turkey Tacos (Taco SALAD for me) with all of the fixins… mmm One of my favs! I love squeezing fresh lime juice all over my taco salad! With that, some salsa, and some fresh cilantro- you don’t even need dressing- a healthy way to cut out some of those calories and not even miss them! 🙂
Tuesday: Jenny Food for me- Left Over Tacos for Mike. It’s Bible Study night for Mike & I so we need something FAST.
Wednesday: Grilled Garlic Lime Mojo Chicken Kabobs w/ Black Beans, Rice, & Sweet Plantains
  • Chicken: Cube up Chicken Breasts into 1 inch cubes and marinate in: Mojo, Lime, Olive Oil, fresh grated Garlic, & a dash of Cayenne for a few hours (or overnight). Kabob and grill.
  • Black Beans: I saute onions & garlic in a touch of olive oil, add the black beans, a splash of lime, and some mojo, & then I finish it off with a dash of Cayenne because, let’s face it, everything is better with a little Cayenne!
Thursday: Bison Burgers (the usual burger just substituting Bison instead of ground beef). If you haven’t tried Bison- give it a shot! It’s actually really yummy. Tastes just like ground beef, but has less fat than Chicken Breast & is really low in calories. Crazy right?!
Friday: I’m taking a half day and then it’s off to Orlando for the weekend! Dinner with the in-laws…
