Easy Cajun Chicken

We got back in town on Sunday night, so last night I needed a super quick and simple dinner since I hadn’t gone grocery shopping yet… hence the Easy Cajun Chicken w/ Black Beans & Rice.

Easy Cajun Chicken


Cajun Seasoning (I use Weber brand)
Salt & Pepper
Juice of 1 Lime
2-4 Chicken Breasts
Olive Oil


Preheat oven to 350 degrees. Heat 2 TBS Olive Oil in a Cast Iron Skillet over Medium heat. Sprinkle Chicken breasts with salt & pepper, and then liberally coat with Cajun Seasoning. Place Chicken in skillet and cook for 5-6 minutes on each side.

Next, juice the lime over the chicken and place the entire cast iron skillet into the oven and bake for 15 - 20 minutes (or until chicken is cooked through). Remove from the oven and serve.

I usually serve it with black beans & rice and plantains (or a salad).
