Key Lime Parfaits
Ingredients:
Key Lime Filling:
2 blocks of Cream Cheese - Room Temperature
(I used 1/3 less fat- but who am i kidding...)
1 Cup Key Lime Juice
2 cans Sweetened Condensed MilkGraham Cracker Crumble:
2 Cups Graham Cracker Crumbs
1 Stick Butter- melted
2/3 Cup SugarWhipped Cream:
2 Cups Cream
Powdered Sugar to taste (1/3 Cup - 2/3 Cup)Directions:
Key Lime Filling:
Beat all ingredients together until Smooth & Creamy. Place in an airtight container and refrigerate for a few hours (or overnight).Graham Cracker Crumble:
Mix together and press into the bottom of a 9x13. Bake at 375 for 12-15 minutes (until lightly golden). Remove from oven and allow to cool. Crumble with a fork and set aside.Whipped Cream:
Beat Cream with a mixer until stiff peaks form, add powdered sugar (use more or less depending on how sweet your prefer it to be). Put into a plastic bag or icing bag so it's easy to pipe into glasses.To Assemble:
Using a pastry bag squeeze some of the Key Lime Filling into a Champagne (or parfait) glass. Sprinkle a TBS or so of Graham cracker Crumble, and then pipe some of the whipped cream in. Repeat one more time and then garnish the top with additional Graham Cracker Crumble.Refrigerate until ready to serve.

Sounds yummy and nice and creamy! I am a key lime pie fan and these parfaits seem like a easy way to whip up a quick dessert, thanks for sharing!
