Peanut Butter Chocolate Chip Cookies

1 3/4 Cups All Purpose Flour
1/2 Cup Sugar
1/2 Cup Brown Sugar
1 tsp Baking Soda
1/2 tsp Salt
1/2 Cup Butter - Room Temp
1/2 Cup Creamy Peanut Butter
2 TBS Milk (I use skim)
1 1/2 tsp Vanilla Extract
1 Egg
3/4 - 1 Cup of Chocolate Chips
I usually use a mix of milk & semi sweet chocolate chips - whatever I have on hand
Additional Sugar (for Rolling Cookies in)

Preheat Oven to 375. Add all ingredients (except Chocolate Chips & Additional Sugar) to the bowl of your stand mixer (or into a large bowl if you're using a hand mixer). Mix well until a stiff dough forms (it's a very THICK dough- don't be concerned!).

Fold chocolate chips into the dough. Using a large cookie dough scoop, scoop dough into palm of hand and roll between your hands until smooth and round. Should be about 1 to 1 1/2 inches in diameter.

Gently roll the balls of dough in additional sugar to coat thoroughly. Place onto an un-greased cookie sheet about 2 inches apart. Bake for 10-12 minutes or until slightly golden in color. Remove and allow to cool on cooling rack (or scarf one down while they are still hot...). Be careful not to over cook!

Best when served with a cold glass of milk. YUM.
