Grilled Chicken Fajitas
So while we were in Orlando for Christmas, the hubs’ Grandma had a taco night at her house. Not just any ol’ run-of-the-mill taco night… she actually fries her own taco shells!!Β She has this really cool contraption that holds corn tortillas in a taco shell shape, so she can fry them! Totally delicious! Homemade Taco shells will rock your socks off! π
Anyhow, ever since then I’ve been on a Mexican kick! I made some homemade Pico de Gallo to go withΒ these delicious Grilled Chicken Fajitas! Man did these hit the spot!

Grilled Chicken Fajitas
Ingredients:
For the Grilled Chicken:
4 Boneless Skinless Chicken Breasts
2 TBS Olive Oil
1 Packet of Dry Fajita Seasoning
1/4 cup water
Dash of Garlic Powder
Dash of Cumin
Dash of Cayenne (Optional)
Juice of 1 LimeFor the Peppers:
2 Green Peppers
1 Large Yellow Onion
1 TBS Olive Oil
Salt & Pepper to taste
Other Ingredients:
Flour Tortillas
Cheese
Sour Cream
Pico de galloDirections:
Place the chicken breasts into a large ziplock bag with 2 TBS olive oil. In a small bowl, whisk the Fajita Seasoning with the water and then add garlic powder, cumin and cayenne. Pour mixture over the chicken and then juice a lime into the bag. Mix thoroughly around the chicken and allow to marinade in the refrigerator for a few hours (I prefer to do mine the night before).
In a skillet, heat 1 TBS of olive oil over medium high heat. Add the sliced onions and peppers and saute until softened and browning. Season with salt & pepper.
Grill chicken on a grill until cooked through. Allow to rest and then slice into 1/4 inch slices. Assemble fajitas by placing a few chicken slices on the tortillas followed by some peppers & onions, a little pico, some cheese, and a dallop of sour cream! Deliciousness!
Serve with Chips and extra Pico de Gallo -or- Black Beans and Rice.
