Lemony Spinach and Feta Orzo
I served this orzo with my Lemon Garlic Grilled Fish the other night. It was the perfect light and delicious combination! I ended up reheating this for my lunch the next day (I added a little extra lemon juice when re-heating it)- it was TASTY!

Lemony Spinach and Feta Orzo
Ingredients:
1 box Orzo Pasta
2 TBS Olive Oil
2 Clove Garlic
1/2 Bag Spinach Leaves
2-4 oz Crumbled Feta Cheese
Juice & Zest of 3 Lemons
Salt & Pepper to TasteDirections:
Cook Orzo according to box instructions.
In a large skillet, heat olive oil over medium high heat. Add the garlic and saute for a minute or two. Add the spinach and toss until it begins to wilt. Season with Salt & Pepper. Add wilted spinach to the bottom of a large serving bowl. Pour cooked and drained orzo on top of the spinach and add the lemon juice/zest, salt and pepper, and crumbled feta. Toss until combined!
Serve as a side dish with fish or chicken.
