Gnocchi alla Vodka

This dish can obviously be made with any sort of pasta, but when I made gnocchi, the hubs requested a vodka sauce.  I’d heard rave reviews about The Pioneer Woman‘s Vodka sauce, so I used her recipe as a jumping point.

With a few minor tweaks (aka: adding more garlic and more heat haha), it was SO STINKING GOOD. I’ve never been a big Vodka Sauce person, but this sauce changed my mind – I LOVE it. Yes. I said it.

Also, for the record, Mike says this homemade gnocchi with vodka sauce is the best thing I have EVER made. Strong statement. He meant it though…

Gnocchi alla Vodka

1 pound Pasta of choice
2 Tablespoons Olive Oil
2 Tablespoons Butter
1 whole Medium Onion - Chopped Finely
4 Cloves Garlic - Chopped
1 Cup Vodka
1 Can (6 oz) Tomato Paste
1 Can (8 oz) Tomato Sauce
1 Cup Heavy Cream
1/2-1 tsp Red Pepper Flakes
1/2 tsp Salt
Freshly Ground Black Pepper - To Taste
Grated Parmesan Cheese - To Taste

Cook pasta according to package directions, being careful not to overcook.

In a large skillet over medium heat, add olive oil and butter. When butter is melted, add in chopped onion and garlic. Stir and allow to cook for two minutes. Pour in vodka and red pepper flakes. Stir and cook for three minutes. Add in tomato paste & tomato sauce and stir. Reduce heat to low and stir in cream. Allow to simmer, being careful not to overheat. Season with salt and pepper.

Drain the pasta, reserving 1 cup of pasta water in case sauce is too thick. Add cooked pasta to the sauce, tossing to combine. Splash in a little water if it needs it. Stir in a little grated Parmesan cheese.

Pour mixture into large serving bowl. Garnish with more Parmesan cheese.

Thank you for posting this recipe! It turned out fantastic. I made just a couple of substitutions, using mild chipotle salsa instead of tomato paste and canned tomato from the garden instead of sauce, but it worked perfectly and had a delightful heat to it!

I had tried this, but slightly modified. Started with a base of bacon (chopped up fine) and used some of the leftover bacon grease in place of the olive oil. And I also added fresh cherry tomatoes towards the end as well as some starchy water from the gnocchi.

Overall, a fantastic rose sauce. Thanks for sharing your recipe. It was a great sauce and my family loved it!
