The Best Chocolate Sheet Cake

Sorry I’ve been M.I.A. for the past 5-6 days! Just got back in town from our annual camping trip (more to come on that!). We go every year with our close friends and it’s an absolute blast!   Expect some pictures and re-caps shortly! 🙂 On to the sheet cake…

Holy moly – When The Pioneer Woman dubbed this “The Best Chocolate Sheet Cake Ever“… she was NOT playing.  This is SO SO SO good – the best sheet cake I’ve ever had. And the icing? Well, let’s just say it may be difficult to refrain from drinking it… yes, it’s THAT good! Try it out – you won’t be disappointed!

Disclaimer: If you are on a diet – stay FAR FAR away from this cake. It’s like crack. You can’t get enough. One piece is never enough… bad news. haha

The Best Chocolate Sheet Cake

For the Cake:
2 Cups Flour
2 Cups Sugar
¼ tsp Salt
4 Tablespoons (heaping) Cocoa
2 Sticks Butter
1 Cup Boiling Water
½ Cup Buttermilk
2 Eggs - beaten
1 tsp Baking Soda
1 tsp Vanilla

For the Icing:
½ Cup Finely Chopped Pecans
1 & ¾ Stick Butter
4 TBS (heaping) Cocoa
6 TBS Milk
1 tsp Vanilla
1 LB (Minus 1/2 Cup) Powdered Sugar


For the Cake:
In a mixing bowl whisk together the flour, sugar, and salt.

In a saucepan, melt the butter and then add the cocoa. Stir together well. Add boiling water and allow mixture to boil for 30 seconds and then turn off the heat. Pour over flour mixture, and stir lightly to cool.

In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, and vanilla. Mix Well. Stir buttermilk mixture into flour/butter/chocolate mixture. Pour into sheet cake pan and bake at 350° for 20 minutes.

For the Icing:
While the cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan and then add cocoa. Stir to combine (I like to use a whisk) then turn off the heat. Add the milk, vanilla, and powdered sugar. Stir together well. Last, add the pecans and stir together one last time. Pour icing over warm cake. Smooth out evenly across the cake using a spatula.

    It really is so good! I leave the nuts out of the icing, so I can’t bring myself not to sift the sugar…makes for lumpy icing. 🙂

    We made this cake last week! I do not even like chocolate cake that much and this was AMAZING! You are right on about not being able to stop trying more. It is so yummy! I LOVE the Pioneer Woman and her cookbook is incredible.
