Green Thumb (or lack thereof)

I’m BACK. Sorry for the sporatic bloggage lately. It’s been a little crazy up in here! My cousin got married (tons of wedding week festivities), my other cousin had a going away party (she just moved to the Czech Republic),  my sister-in-law had her baby shower… and the list goes on! Anyhow, I am BACK and ready to blog.

This past week I decided to start a little garden on my balcony.  We own a 3 story town home so we don’t have a yard (at least one that isn’t communal). So I’m going to ol’ potted garden route! Cross your fingers everyone, I don’t have the best reputation when it comes to keeping plants alive! haha Here’s what I’ve got going on so far:

Basil and Flat-Leaf Parsley - I’ve already used some of the basil on homemade Pizza (delicious!)

Mint – Can we say MOJITO?! Just in time for the heat that has arrived here in FL. It already feels like summer!

Eggplant – I adore eggplant. Eggplant Parmesan, Baba Ganoush, and even plain ol’ roasted eggplant with a little salt in pita bread. YUM.

Roma Tomatoes – Oh how I can’t wait to make Pasta, Bruschetta, and Pico de Gallo!!

And last, but not least… Strawberries – My FAVORITE fruit. Ever.

So that is the start of my potted garden! I’m super pumped! While on the topic of being pumped, I have to give a quick shout out to my Uncle Bruce and Aunt Amy who sent me this gem of a treat:

Homemade Maple Syrup! HOLLA! I was ecstatic to receive a bottle of this liquid gold in the mail! Uncle Bruce literally puts taps in his maple trees and makes these bottles of goodness with the sap! Thanks guys – you rock!

Oh, and speaking of homemade… here’s a quick photo update on my homemade vanilla extract:

They’ve been ‘marinating’ for about 5 1/2 weeks now… only 3 1/2 more weeks left! Remember when they looked like this? I am super duper excited to use this stuff in a few weeks!!

Alright ya’ll… I’m off to B-Study with some fantastic ladies! I’m bringing dessert… Key Lime Trifle! mmm… I’ll leave you with a photo of one sweet and handsome Boxer dog:

    Good luck with your garden!! Try rosemary too…. I planted a small plant years back and now it is a giant fragrant bush! (I live in Florida too) Your pups are precious!

      Rosemary is a great idea! It’s hard to know what herb can handle the heat here in FL (i tried Cilantro last year… and that was an epic fail! haha)

    I’m sooooo envious of your plants! I wish I had room outside to put them, or a cat who wouldn’t eat them if I grew them inside.
