Sorry for taking the day off yesterday… I came down with a little something (and not a good something)! I’m pretty sure my eye watered ALL day, and that I went through an entire box of tissues blowing my nose at work haha NO. FUN. Anyhow, I was feeling pretty crummy when I got home and was not in the mood to cook dinner  (which is how you KNOW I’m not feeling too hot ;))

Anyhow, I walked into the house to this glorious spread:

Yah… I have the best husband ever!

He stopped by the Middle Eastern Market and picked up some of my absolute FAVORITES: fresh made pita, hummus, and the most GORGEOUS Kalamata olives (yes, I just referred to olives as gorgeous). Then he swung by Publix and snagged a hot Rotisserie Chicken, came home, and chopped up some lettuce and tomato from the fridge and VOILA! This baby was born:

Not one homemade thing and it was probably the best thing I ate all week (LOVE when that happens!)!! All it takes is a few fresh, quality ingredients and you have one heck of a meal! Thank you Mike for being the brains behind this operation!

If you need something fast, fresh, healthy, and delicious – this fits the bill! Man, I love Middle Eastern food… have I told you that before?? Oops… I have?! my bad… 😉

Note: If you don’t have a Middle Eastern Market or Restaurant nearby, you may want to whip up your own pita and hummus (as those are the critical parts of this dish & you don’t want to skimp on quality!). 

The only thing I have left to say is this: Give yourself a break from cooking and whip this nutritious and delicious treat up ASAP!

Oh, yah and to cap off my meal, I curled up under my blanket and with another Hot Toddy (compliments of the hubs)… (Hot Toddy = Tea, Honey, Lemon, and Gentleman Jack… an old  fashioned cold remedy).

Middle Eastern Chicken Wraps

Yield: 6 wraps

Prep Time: 5-10 minutes

Total Time: 5-10 minutes

THE easiest, most delicious, chicken pita wrap! Perfect for a night off from cooking! 😉 Add any additional toppings you desire!

Ingredients:

For the Wraps:
1 Rotisserie Chicken, skinned and pulled into bite sized pieces
6 fresh pita rounds (preferably from a Middle Eastern Market/Restaurant)
Hummus (preferably from a Middle Eastern Market/Restaurant)
Quality pitted Kalamata olives
Lettuce, chopped
Tomato, chopped

Additional Topping Ideas:
crumbled feta
diced cucumber
balsamic reduction

Directions:

Warm pita in microwave or oven. Spread with a healthy layer of hummus topped with lettuce, chicken, olives, and tomatoes (add feta, cucumber, and balsamic drizzle if desired).

Wrap and DEVOUR. See, I told you... Easy Peasy!
