Triple Chocolate Pecan Cookies

Everyone can use a little chocolate in their lives…

And these babies, my friends, have THREE kinds of chocolate (can I get a, amen?!)

If you are a chocoholic like myself… you. will. love. these.

Super moist, chocolately, and beyond decadent. You’ll want a big ol’ glass of milk with these!

I hope you are a dunker, like myself (I never did understand those “sippers” – weird if you ask me! hah)

In, case you haven’t noticed yet… Christmas is in 5 (F-I-V-E) days!!!!! That means it’s time to get baking, folks! Add these gems to your list! Trust. me.

If your not a chocolate person (shame on you) ;)

Here are some other treats to bake:

Soft Frosted Sugar Cookies

Pumpkin Snickerdoodles (it’s NEVER too late for pumpkin in my books!)

Peanut Butter Chocolate Chip Cookies

Chocolate Almond Buttercrunch Toffee

Macadamia Nut Butter Caramels

Triple Chocolate Pecan Cookies

Yield: 16 large cookies

Prep Time: 10 minutes

Cook Time: 15-18 minutes

Total Time: 30 minutes

A chocolate lover's dream cookie!

Ingredients:

2 sticks cold salted butter, cubed
1 1/4 cups sugar
2 large eggs
2 teaspoons vanilla extract
1/2 cup dark cocoa powder
2 1/4 cups all purpose flour
1 teaspoon baking powder
pinch of salt
3/4 cup semi-sweet chocolate chips
3/4 cup dark chocolate chips
1 cup pecans, chopped

Directions:

Preheat the oven to 350˚ F. Line 2 baking sheets with parchment paper. Add the butter and sugar to the bowl of an electric stand mixer. Beat together for 2-3 minutes on medium-high speed (until fluffy). Add the eggs, one at a time, scraping down the bowl as needed. Mix in the vanilla and cocoa powder until incorporated well.

Add the flour, salt, and baking powder to the bowl and mix on low speed until incorporated. Lastly, fold in the chocolate chips & pecans with a spatula.

Scoop the dough into roughly 1/4 cup balls and place onto prepared baking sheets a couple of inches apart. Flatten slightly with the palm of your hand. Bake for 15-20 minutes, until just set. REmove from ove and allow to cool on the baking sheets for 5 minutes. Transfer to a wire rack to cool completely.

Ok, as I am older than history by 3 1/2 weeks, I can say definitively that the only people who do not feel if there is anything better than chocolate, the gods kept it for themselves are sick, warped, insane, depraved, and deprived. Chocolate is two of the main food grous… It’s so good, it has to have two!
