Coconut Lime Margarita
Sorry this is coming late… it’s midnight and we JUST finished packing for our cruise – I figured better late than never! 😉 Happy Friday (hey, it’s stil Friday for you West Coasters!)
Ha ha, it’s Friday ya’ll. That means three things. First, the weekend is here. Second, it’s cocktail Friday (a little late). Third, it’s time to take a must needed vacation. That’s right, the Mrs and I are off to cruise through the Gulf of Mexico in style. And we are PUMPED!
For some random reason, whenever I think about tropical vacations, I think of that silly song by Harry Nilsson named Coconut. You know the song; “she put de lime in the coconut, she drank em both up, she put de lime in the coconut, she drank em both up…”
That song makes me laugh but this time it inspired me for my weekly cocktail. This week, I put the lime in the coconut and then made it even better with a little simple syrup and TEQUILA!
Yep, it’s that simple. And yet, it’s beyond delicious. It’s sweet and tangy with bold notes of creamy, coconut flavor and subtle hints of smooth and slightly peppery tequila. I’m in love. I should go on vacation more often in order to find inspiration from it.
Look, hot weather is a few months away, but why wait? Beat away those winter doldrums with this amazingly tasty, tropical cocktail.
Remember, it’s 5 o’clock (and 90 degrees and sunny) somewhere!

Coconut Lime Margarita
Yield: 1 cocktail
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients:
1 to 1 ½ ounces silver tequila
1 ounce simple syrup
1 ounce fresh squeezed lime juice
2 tablespoons cream of coconut milk* (found in cans with the cocktail mixers)Directions:
*Coconut cream turns to solid in cool temperatures (ie: in your house). Re-liquefy coconut cream by steeping can in hot water for a few minutes. Open can and stir to incorporate.
Combine all ingredients in a cocktail shaker or tall glass and shake or stir well. Pour ingredients over ice.

I wish it was summer so I could have this right now. But it just snowed like 4 inches and all I want is coffee and cocoa.

I made Spinach and Roasted Veggie Enchiladas on Monday and this would have added such a wonderfully sweet little cocktail to pair with it! I’m going to have to make this on my To Make list especially with all the Mexican food that goes on in our house!

I tried this recipe for the first time tonight-and I can safely say that this is better than any cocktail I’ve ever had. I did alter the recipe a little though, and I highly recommend it. Instead of stirring the ingredients together, I made a frozen coconut lime margarita with my blender. It made all the difference in the world, thanks so much for the recipe!! And Happy National Margarita Day!! 🙂
