Okay, so I know it’s Friday, and you should be reading about some sort of delectable cocktail from the hubs… yet here you are seeing ASPARAGUS. Seriously, Tina? What’s your problem?! hah Let me explain.

Hubs recently changed jobs and has been in training over the past few weeks. Wednesday (at 5 am) he had to fly to Ohio for 48 hours and he got home at 1 am last night (technically this morning). Then, the poor man had to get up at 5 am to drive down to Miami for more training. So, needless to say, I thought I’d give him a pass today – he SO deserves it! Any objections? Didn’t think so… haha 😉

So, I’ve had this post pending and NEED to share it with you guys! It’s another SUPER simple recipe (if you can even call it a recipe), but it is my FAVORITE vegetable and FAVORITE way of preparing it…

It doesn’t get easier than fresh asparagus drizzled with a touch of olive oil and then seasoned with salt and pepper and then baked in the oven at a high temperature to roast them to perfection (Yes, I know that was a TOTAL run-on sentence, but I had to get it all out in one breath!).

I LOVE Asparagus. And this EASY method of cooking it is DELICIOUS as is, or you can add additional flavors seasonings to finish it off. Some of my favorite Combos:

  • A little Fresh Squeezed Lemon Juice and Crumbled Goat Cheese
  • Toasted Almonds and Balsamic Reduction
  • Roasted Garlic and Parmesan Shavings

Easy Oven Roasted Asparagus

Yield: 2-3 servings

Prep Time: 5 minutes

Cook Time: 8-15 minutes

Total Time: 12-20 minutes

The easiest (and my FAVORITE) way to prepare asparagus! This can also be done on a grill using a grill pan -or- by making a tin foil boat... just be sure to turn the asparagus often so the bottom doesn't burn!


1 bunch of fresh asparagus
1 tablespoon (about) olive oil
salt & freshly cracked black pepper


Preheat the oven to 400° F. Line a baking sheet (or jelly roll pan) with foil or parchement paper.

Wash the asparagus and pat dry. Trim the tough ends off a bit (the way to find where to trim the asparagus back is by gently bending the asparagus spear until it snaps at it's natural breaking point.) - SEE VIDEO LINK AT BOTTOM OF POST!

Bake for 8-15 minutes (until desired tenderness- cooktime varies depeding on the thickness of the asparagus spears).

Oh, and since it’s Friday and I can’t just give you a VEGETABLE on a Friday (I mean, come on, it’s DEFINITELY not a fair swap out from a cocktail to a vegetable) hah!  I thought I’d give you some of my favorite winter warmer meals (COMFORT foods that’ll warm you up!).
