Okay, I KNOW you all have had monkey bread before… cinnamon, sugar, butter, biscuits baked together until hot gooey and delicious. Monkey bread is typically baked in a bundt pan, but here’s the thing, my FAVORITE part about monkey bread is that bottom outer edge that gets that gooey caramelization going on (you know what I’m talking about)!
So it got me thinking… If I made little mini versions of the monkey bread, every little glorious piece would have some of that coveted caramelization. Plus miniature versions of anything are always SO. MUCH. BETTER!
The individual size makes them perfect little portion controlled bites (scratch that… there is NO WAY to eat just one)! These babies are TOO. GOOD.

That, my friends, is what you call hubby approved. Oh, and the kiddos will love it too! This was always one of my favorite treats growing up… Ah… nostalgia…

Monkey Muffins
Yield: 16 "muffins"
Prep Time: 20 minutes
Cook Time: 25 minutes
Total Time: 45 minutes
Miniature versions of a classic breakfast treat!
Ingredients:
2 (16.3 ounce) cans buttermilk biscuits
2 cups sugar
2 1/2 TBS cinnamon
2 sticks salted butterDirections:
Preheat oven to 350ºF. Cut each biscuit into 6 equal sized pieces. Roll each of the pieces into balls and set aside. Next, Mix together the cinnamon and sugar in a bowl. In a third (and microwave safe) bowl, place the butter. Melt the butter in microwave until just melted.
Spray your muffin tins with non-stick cooking spray. Place 1 teaspoon cinnamon-sugar mixture and 2 teaspoons butter into the bottom of each muffin tin. Next, dunk each dough ball into the melted butter and then roll in the cinnamon-sugar mixture. Place 6 of the coated dough balls into each muffin tin. Repeat until all muffin tins are filled. Place muffin pan on a large jelly roll pan (to catch any spillage).
Bake for 25-35 minutes (until dough is cooked through). Carefully invert muffin pan onto the jelly roll pan and gently shake to remove the monkey muffins. Place on a platter and serve hot.
