Hey friends… I know I’ve been I little MIA this week since getting back from Food Blog Forum last weekend… man, WHAT a FUN weekend it was!!! I’ve been having a little difficulty getting back into the swing of things… vacation does that to ya! ๐Ÿ˜‰

Anyhow, Let’s talk Irish Coffee.

We’re talking real. authentic. Irish Coffee…

I work in quite the multicultural office… Of the 12 of us, there is 1 Irish, 1 Cuban, 1 Puerto Rican, 1 Columbian, and 1 Kenyan! Yes, we are quite the diverse group. I love it though, especially when I need an expert resource for any of the above mentioned cuisines! ๐Ÿ˜‰

For this Irish Coffee, I called upon my resident Irish resource, Philomena, who happens to hail from Dublin, Ireland.

I’m told that there are many variations on where the Irish coffee started but the REAL story is that it was created by Joe Sheridan at Foynes’ Port in County Limerick. He made them for American passengers who were disembarking from a PamAm flying boat on a miserably cold Irish winter evening in the 1940’s. His idea was to add whiskey to the coffee to help warm the passengers up. When they asked what they were drinking, he told them, “Irish Coffee”! (Source)

Authentic Irish coffee consists of: Boiling Water, Instant coffee (yes… INSTANT – it’s how the Irish do it!), Jameson Irish Whiskey, sugar, and fresh unsweetened whipped cream… simple stuff!

My adorable niece Kate couldn’t drink the Irish coffee but she certainly approved of the whipped cream:

I know I’m a week late to the game with the Irish stuff seeing as St. Paddy’s day has come and gone… but it’s NEVER too late for Irish coffee!!! TRUST. ME. ๐Ÿ˜‰

Oh, and I know that Cocktail Friday is typically done by the hubs, but he’s still getting into the groove of his new job. He has assured me, though, that his Cocktail Friday posts will be returning in April… get excited people!

Authentic Irish Coffee

Yield: 1 Irish Coffee

Prep Time: 10 minutes

The Irish don't have precise measurements for these drinks. They use a small kitchen spoon to measure out the coffee & sugar.


Boiling water
1 heaping spoon of instant coffee
1 heaping spoon of sugar (more if you like it a little sweeter)
1 ounce Jameson Whiskey
16 ounces heavy cream


Beat the heavy whipping cream until soft peaks start to form (you want it to be pretty soft). Set aside. This makes enough whipped cream for 4-6 coffees.

Heat glass mug with a little bit of the boiling water and then empty out the glass. Add a heaping spoon of instant coffee and a heaping spoon of sugar (more if you like it a little sweeter). Add boiling water to fill the glass just over 2/3 full. Stir until coffee and sugar are dissolved. Add the ounce of Irish Whiskey to the coffee and gently stir.

Lastly, stir the coffee vigorously in a circular motion. Remove spoon and add a hefty dollop of whipped cream to the Irish coffee while it is swirling in a circular motion (this allows it to set prettily on top of the coffee)!

Drink as is (or stir the cream into the coffee). Enjoy!
