Anyhow, I have ALWAYS been a fan of chocolate & caramel (i’ll take that over chocolate and peanut butter ANY day). So, when I saw these cookies by Six Sisters popping up everywhere on Pinterest, i KNEW i had to make them. Well, my sister in-law Heather got around to making them first and brought them to my house.

Oh. my. gosh.

I pretty much ate the whole plate in 2 days (a couple for breakfast… a couple after lunch… and hey why not a couple for dessert? Perhaps it was the PMS talking? haha)

Anyhow, I made them again recently because I was seriously craving them and well… this happened as they were coming out of the oven:

Well, due to this incident – I had to revert back to my old camera/lens and I was pretty worked up about the catastrophe that had just happened. So, you’ll have to excuse the mediocre rushed photos. I just snapped a couple of shots and then had a full. on. melt. down. haha

Whatevs – life rolls on… my camera was fixed (hooray!) but my favorite lens (50 mm) was TOAST. Guess I have something for my b-day wishlist now! Come on July 6th!!! 😉

Do yourselves a favor and go make these cookies (they are TOO easy not to!)…

Oh, and be sure to eat them while they are still warm (WOWZA! Hello there gooey melty chocolate and caramel!!!).

Chocolate Rolo Cookies

Yield: 36 cookies

Prep Time: 10 minutes

Cook Time: 7-9 minutes

Total Time: 20 minutes

Easy peasy cookies using cake mix! Super moist with chocolate/carmel centers! KILLER.


1 box Devils Food Cake mix
2 eggs
1/3 cup oil
1 teaspoon vanilla extract
1 bag of Rolo candies
1/2 cup powdered sugar, for dusting


Preheat oven to 350º. Unwrap 36 rolo candies and set aside.

Mix cake mix, oil, eggs, and vanilla together in a medium bowl. Take a small amount dough and roll into a ball and then press one rolo into the center and form a ball around it. Use JUST enough cookie dough to cover the rolo. Repeat with remaining dough and rolos.

Place on parchment lined cookie sheet and bake for 7-9 minutes. Cool on a cooling rack and dust with powdered sugar before serving.
