Easy Shortcut Lasagna with Alexia Garlic Bread

Easy Shortcut Lasagna
Yield: 10-12 servings
A few shortcuts make this lasagna a breeze to pull together on a weeknight!
2 tablespoons olive oil
1 small onion, peeled and diced
salt & pepper
1 1/3 pound lean ground beef
3 hot italian sausages, casings removed
1/2 teaspoon garlic power
1/2 teaspoon oregano
1/4-1/2 teaspoon crushed red pepper flakes
2 - 24 oz jars of pasta sauce of choice
32 ounces whole milk Ricotta cheese
16 ounces of mozzarella, shredded and divided
8 ounce box of Oven-Ready Pasta
Heat olive oil in a large skillet (or stockpot) over medium-high heat. Saute onions until soft and translucent (3-5 minutes). Season the onions with a sprinkle of salt & pepper and then push them to the edges of the pan, leaving a bare spot in in the center of the pan to brown your meat on (see video).
Crumble the ground beef and sausage into the pan and begin to brown, breaking the meat apart with a spatula as you go. Season with garlic powder, oregano, and crushed red pepper flakes. Once meat is thoroughly cooked (a minimum of 165ºF), add the 2 jars of your favorite bottled pasta sauce! Bring to a simmer, reduce heat to low, and keep warm until ready to use.
In a medium mixing bowl, add the ricotta cheese and 8 ounces of the shredded mozzarella. Season with a pinch of salt & pepper and stir well to loosen the mixture up a bit.
TO ASSEMBLE: Preheat oven to 350ºF. Spray a 9 x 13 oven safe baking dish with non-stick cooking spray. Add a thin layer of the meat sauce and top with a layer of the oven-ready noodles. Next add some of the cheese mixture and spread out over the noodles as best as you can (it will get a bit messy here!). Add another layer of meat sauce, noodles, and then cheese. Repeat one more time ending with meat sauce. Top with remaining shredded mozzarella. Bake at 350ºF for 35-45 minutes or until piping hot ad the cheese on top begins to brown.
Remove from oven and allow to rest for 15-20 minutes to set up enough to cut. This is the perfect time to put your Alexia Garlic Baguettes in the oven! Once they are ready, cut your lasagna and serve with a hunk or two of the baguette.
