Chicken Lettuce Wraps with Thai Peanut Sauce by My Life as a Mrs

I bet ya’ll thought I fell off the face of the planet! Well surprise! As you can see by my Instagram feed, I didn’t… ;)

I’ve just been busy with my #1 job  soaking up and savoring the moments with my sweet little girl. I wouldn’t trade it for the world. I have to tell you though, the time is just flying by WAY too quickly! The kid is going to be SIX months old next week!

Ummm somebody stop the clock.

Sometimes I feel like I’m going to blink and we’ll be sending her off to college (I may be a bit dramatic, but seriously it’s all happening so fast). After years and years of waiting for her (what seemed to be an ETERNITY), she’s finally here! But I feel like every other second I’m packing up clothes that are too small, busting out new toys that I thought would take forever for her to be interested in, and wiping away tears as I look at pictures of her itty bitty self when she first arrived. Hormonal much?

So I hope ya’ll understand that she’s my new priority for this season. Recipes are a little fewer and further between, but as she gets bigger and more independent, I’m sure things will pick back up. For now, I’m savoring this sweet time that I get to have with her. I don’t want to look back and realize I missed out on moments that I can never get back. I’m sure you understand… :)

I’ve had this recipe for these DELICIOUS lettuce wraps sitting in my queue for far too long. I finally had time to upload the photos and put together this post…

We’ve been eating a lot lighter these days since I’m trying to kick the baby weight.

Side Note: Can somebody tell me why it goes on so easy and comes off so hard?!!! Not cool, baby weight. Not. Cool.

We mostly eat at home, but when we go out I have come to find a few healthier favorites that work with my calorie counting plan. One of my favorites from The Cheesecake Factory are their Skinnylicious Asian Lettuce Wrap Tacos. SO GOOD. You know me, I go to a restaurant and immediately brainstorm about making my favorite dishes at home…

So I did.

These babies were born, and although not the EXACT same as Cheesecake Factory’s Dish (umm hello – I was not about to make 3 sauces for 1 dish… ain’t nobody got time for that!), they were every bit as delicious!

Hubs was a HUGE fan (As long as I made the wraps for him). He would have preferred that I just chopped in all up into a big bowl and turned it into a salad… ‘someone’ doesn’t like having to work for his food! ;)

Although, now that I think of it, this is definitely going to be turned into a salad in the near future… I’ll report back to ya!

For now, ENJOY! It’s worth all the fuss!

Chicken Lettuce Wraps with Thai Peanut Sauce

Yield: 4 servings

Prep Time: 30 minutes

Cook Time: 10 minutes

Total Time: 45 minutes

This seems like there are a lot of components, but much can be done ahead to make this easy come dinner time! Marinade the chicken, make the cucumber salad, and peanut sauce the night before and this will come together in a snap the following day!

Ingredients:

For the chicken:
6 boneless skinless chicken breasts (about 1.5 lbs), butterflied into 2 cutlets each*
1/4 cup low sodium soy sauce
2 tablespoons lime juice
2 tablespoons water
1 tablespoon rice vinegar/rice wine vinegar
1 tablespoon creamy peanut butter
3 cloves garlic, grated
1 teaspoon crushed red pepper flakes
1/2 teaspoon ground ginger (dried)

*May substitute 6 chicken cutlets equalling 1 pound

For the Thai Peanut Sauce:
1/4 cup creamy peanut butter
2 tablespoons water
4 tablespoons granulated sugar
1 tablespoon low sodium soy sauce
1 teaspoon rice vinegar
1-2 teaspoons lime juice
1/2-1 teaspoon sriracha chili paste (to spice preference)

For the marinaded cucumbers:
2 hot house cucumber (the wrapped seedless kind)
4 teaspoons rice vinegar
1 teaspoon sugar
2 pinches of salt
crushed red pepper flakes to taste (we like HEAT so we used about a teaspoon)

For the Lettuce Wraps:
Butter Leaf Lettuce
Shredded Carrots
Bean Sprouts
Chopped Peanuts
Toasted Sesame Seeds
Cilantro

Directions:

For the chicken:
Add the chicken to a ziplock bag. Whisk remaining ingredients together and pour over chicken, seal bag, and swish it around until the chicken is coated. Place in the refrigerator and allow to marinade for at least an hour (may do this the night before). When ready to cook. Preheat grill to medium high heat (400ºF). Spray grill with non-stick cooking spray and add chicken. Cook for 3-4 minutes until golden brown (with nice grill marks) on the bottom side, flip and cook for an additional 3-4 minutes (until internal temperature reads 165ºF with a thermometer). Remove from heat and allow to rest for 5-10 minutes. Cut into thin strips. May garnish with a pinch of toasted sesame seeds and some of the crushed peanuts.

For the Thai Peanut Sauce:
Add all ingredients to a blender or food processor and pulse until well combined (may also whisk by hand vigorously). Cover and refrigerate until ready to use.

For the marinaded cucumbers:
Slice cucumbers as thin as you can get them (preferably using a mandoline slicer) and place in a bowl. Add the rice vinegar, sugar, salt, and crushed red pepper; toss to combine. Set aside until ready to use.

For the Lettuce Wraps:
Take a butter lettuce leaf and add a few slices of chicken. Top with carrots, bean sprouts, marinaded cucumbers, and a drizzle of the peanut sauce. Garnish with toasted sesame seeds, crushed peanuts, and some fresh cilantro.

    ugh I hear you girl..I struggle all the time with whether or not to quit the blog…B is my #1 priority over any other “hobby” and I still have my FT job to pay attention to (aside from being a mom)! Definitely don’t feel guilty and soak up this precious time :)
