Ritz Cracker Chicken

So I kinda combined my Monday & Tuesday meal plans… and ate them on Tuesday night. My infamous Ritz Cracker Chicken Tenders & served it with my easy Strawberry Brie Salad. So I thought I’d take some pictures and post them here. 🙂

Ritz Cracker Chicken

Ingredients:

Chicken Breasts or Strips
Ranch Dressing (bottle)
Ritz Crackers (about 1 sleeve crushed up)
Salt & Pepper to taste

Directions:

Preheat oven to 350. Line up an assembly line with Chicken (i used tenders but you can use chicken breasts too- just pound them out first), Ranch Dressing, and Crushed up Ritz Crackers. Salt & pepper the chicken and then coat them in ranch and then the Ritz Crackers. Place in a Pyrex dish sprayed with cooking spray. Bake in oven for 40-45 minutes (until cooked through).

    It really is yummy!! Brian LOVED it! I am going to have to try that salad, I’ve made something similar but I haven’t tried it with that cheese which sounds so good 🙂

    I made the chicken last night! It was so good!! One quick question…do you normally spray the glass dish with cooking spray? I had an issue with some of the coating being left on the pan! 🙂

    I made this tonight but I added shredded colby jack cheese and mozzarella cheese to the ritz crackers, it was soooooo good!!!
