BBQ Chicken & Grilled Pineapple Quesadillas
I made these over a month ago… however due to my house being under construction, I’m just now finally getting around to posting!
I first saw these on The Pioneer Woman’s site and adapted the recipe to my own taste 🙂

BBQ Chicken & Grilled Pineapple Quesadillas
Adapted From: The Pioneer Woman
Ingredients:
4 Large Flour Tortillas
Butter
Grilled Pineapple, Sliced (I chopped an grilled an entire pineapple & saved what I didn't use)
3 Boneless Skinless Chicken Breasts
Salt, Pepper, Cajun Seasoning & Garlic Powder (to taste)
3 cups Monterey Jack Cheese, Grated
Pickled Jalapenos (Jar)
Red Onion
Cilantro
4-5 Tablespoons Barbecue SauceDirections:
Cut Pineapple into rings and Red Onion into thin Rounds (slices). Grill both over low heat. Onced browned, remove from grill (or grill pan) & Chop into chunks - make sure you cut around pineapple cores! - and set aside.
Pound chicken to 1/4 inch thick and season with Salt, Pepper, Garlic Powder & Cajun Seasoning to taste. Spray grill pan with pam and grill the chicken. Brush with barbecue sauce once chicken is cooked and allow to sit on grill for a few extra minutes. Slice the Chicken into very thin slices and set aside.
Put a little butter in a cast iron skillet over medium-high heat. Add one large tortilla
To assemble, sprinkle grated Monterey Jack on half of the tortilla. Arrange chicken slices evenly over the surface. Add pineapple & red onion slices along with jalapeno slices. Sprinkle on cilantro. Drizzle some more barbecue sauce over the top. Fold the empty half of the tortilla over onto the side with all of the toppings. When cheese begins to melt, flip and brown the other side of the tortilla.
Serve with sour cream, pico de gallo, and lime wedges.
