Creamy Lemon Mushroom Pasta

So Mike was umpiring one night, and I needed something for dinner. ย I didn’t feel like going to the grocery store, so I decided to just “throw something together” with what I had. Whole Wheat Pasta (Check), Mushrooms that needed to be used ASAP(Check), Lemons also needing to be used up (Check), Left Over Cream from another Dish (Check), 1/2 of a red onion (Check), Can of Black Olives (Check)… hmmm… I love me a good Pasta!!!
This dish ended up being fantastic (fantastic enough to make again!!) The hubs came in from umpiring and took a bite from the left overs. ย His words were, “Holy Cow- that’s better than at a restaurant!!” Gotta love my (partial) taste-tester! ๐Ÿ™‚

Creamy Lemon Mushroom Pasta

Ingredients:

8 oz Whole Wheat Pasta (Roughly half a box)
2 tsp Olive Oil
8 oz Can of Black Olives (halved)
1 Pint of Sliced Mushrooms (I used Baby Bellas since they were on sale)
1/2 Red Onion (Coarsely Chopped)
4 Cloves Garlic (Chopped)
1 tsp Lemon Zest
Juice of 2 Lemons
1/2 Cup Cream

Directions:

Boil Water and cook pasta to al dente. While Pasta is cooking, heat olive oil in a skillet over medium-high heat. Place onions in skillet and cook for 2-3 minutes. Add the Mushrooms and Olives and allow to cook down and soften (3-4 more minutes or so). Add the Garlic and stir. Next, add the Lemon Juice and Lemon Zest and allow to heat. Turn off the heat and add the cream, and mix together. Add Salt & Pepper to Taste.

Drain cooked Pasta and add to skillet and toss with the sauce. Sprinkle Fresh Parmesan Cheese over top if desired. DELISH! ๐Ÿ™‚
