Creamy Lemon Mushroom Pasta
Ingredients:
8 oz Whole Wheat Pasta (Roughly half a box)
2 tsp Olive Oil
8 oz Can of Black Olives (halved)
1 Pint of Sliced Mushrooms (I used Baby Bellas since they were on sale)
1/2 Red Onion (Coarsely Chopped)
4 Cloves Garlic (Chopped)
1 tsp Lemon Zest
Juice of 2 Lemons
1/2 Cup CreamDirections:
Boil Water and cook pasta to al dente. While Pasta is cooking, heat olive oil in a skillet over medium-high heat. Place onions in skillet and cook for 2-3 minutes. Add the Mushrooms and Olives and allow to cook down and soften (3-4 more minutes or so). Add the Garlic and stir. Next, add the Lemon Juice and Lemon Zest and allow to heat. Turn off the heat and add the cream, and mix together. Add Salt & Pepper to Taste.
Drain cooked Pasta and add to skillet and toss with the sauce. Sprinkle Fresh Parmesan Cheese over top if desired. DELISH! ๐

Sometimes pasta is the best dinner ever and this one sounds fabulous!! I just found you through Foodbuzz and can't believe I haven't seen your blog before. I'm loving Project Food Blog because it's helping me find so many amazing blogs ๐
