Egg White Spinach Scramble

I needed a quick, healthy breakfast the other day.  This is what i came up with. It was healthy & super delicious.  Best of all, it held me over like you wouldn’t believe! Usually mid-morning I am Starving… not this morning though!  I ate mine with a thin slice of homemade honey oat toast.

Egg White Spinach Scramble

Ingredients:

1 TBS Brummel & Brown (Yogurt Spread)
1/4 Red Onion
2 Cups Fresh Spinach
(don't worry it'll saute down to almost nothing!)
Salt & Pepper to Taste
2 Egg Whites
1.5 oz shredded Colby Jack Cheese

Directions:

Melt the yogurt spread in a Saute Pan and saute the red onion (thinly chopped) until translucent. Add the Spinach and toss with tongs until it wilts down. Salt & Pepper the sauteed veggies thoroughly.

Scramble the 2 Egg Whites in a bowl with a fork then mix in the Shredded Cheese. Mixing it ahead helps to incorporate it into the egg and the cheese turns out gooey and delicious! Add the scrambled egg white/cheese mixture to the sauteed veggies. Allow the eggs to cook, gently tossing with a spatula.

Add Salt & Pepper and serve with Toast and Hot Coffee. Enjoy!
