Lemon Garlic Grilled Fish

The hubs and I have been wanting some LIGHT food after all of the rich (AKA: totally unhealthy) holiday foods! Being the Florida girl that I am, I happen to love me some fish! This grilled fish was first up on my menu this week. Super quick. Super easy. Super delicious. Oh, and not too mention, LOW FAT and HEALTHY!

I did this last minute so my fish only marinaded for about 20 minutes.  Normally I prefer to put the fish in the marinade before I leave for work in the morning (or on my lunch break). Then when I get home at 5, it’s ready to go right on the grill!

Lemon Garlic Grilled Fish

Ingredients:

1 lb White Flakey Fish (I used Tilapia)- Grouper, Snapper, or Dolphin would work also
Zest & Juice of 1 + 1/2 Lemons
4 Cloves Garlic - Grated
2 TBS Olive Oil
Dash of Garlic Powder
Salt & Pepper
Dash of Cayenne (Optional)
The other 1/2 Lemon, in wedges

Directions:

Season both sides of the fish with a little salt and pepper. In a large ziplock bag, add the Lemon Juice, Garlic, Olive Oil, Garlic Powder and Cayenne - Mix well. Add the fish to the ziplock bag and move it around, being sure to coat it with the marinade. Allow to sit for at least 30 minutes (you can put the fish in the marinade in the morning and let it meld all day!).

Pre-heat grill to medium-high heat. Spray the grate thoroughly with non-stick cooking spray and then place the fish onto the grill. Cook for about 3-4 minutes on each side (may be more or less depending on the thickness of the fish- ours was super thin). Be sure not to over-cook the fish, it will dry out quickly. Keep a close eye on it - as soon as it is opaque in the middle, take it off the heat!

Serve with a lemon wedge (to be squeezed over the fish before eating). Goes great over Lemon Orzo, Rice Pilaf, or Coconut Rice.
