Turkey Taco Salad

I am off to Boca for the weekend! My cousin Jorden is getting married, so we will be spending the weekend with the family enjoying the wedding festivities! I thought I’d leave you with a little ‘recipe’…

This is my go-to quick weeknight dinner! I don’t know that I can really call it a “recipe” – it’s more of a throw it together kinda thing! haha But somehow this easy peasy dish is one of our all time favs! This, my friends, is how us Wiley’s make our taco salads!

I have a confession: I always use a packet (gasp!) of taco seasoning but you know me, I have to ‘doctor it up’ with the spices in my spice cabinet (the usual suspects: Cayenne, Garlic Salt, & Cumin)! When do I ever make a dish NOT using Cayenne or Garlic? It’s a rare day…

Go on and make this- it’s easy, yummy, and healthy!

Turkey Taco Salad

Ingredients:

1 lb ground turkey breast
Black Pepper
Dash of Garlic Salt
1 packet taco seasoning
Dash of Cayenne
Dash of Cumin

Toppings:
Lettuce (I use a Romaine/Iceberg Mix)
Diced Tomato
Diced Onion
Sliced Avacado
Black Olives (sliced or whole)
Chopped Cilantro
Fat Free Sour Cream
Salsa
Shredded Cheese
Fresh Lime Wedges

Directions:

Brown Turkey meat in a skillet. I had the dash (or 2) of Garlic salt and some cracked black pepper while it's cooking! Once brown, add the taco seasoning (and water - use what the back of the packet says). Mix in a little Cayenne and Cumin to taste (I add a few shakes of each!). Reduce heat to low and keep warm until ready to use.

For the Taco Salad, I put lettuce in the bowl and squeeze a little lime juice all over it (1-2 wedges). Next I top it with: taco meat then cheese, onion, tomato, avacado, black olives and lots of cilantro. Lastly, I mix up a little Salsa and sour cream in a bowl (add salsa to taste - I use roughly a 1 to 1 ratio). I drizzle this mixture on top as the "dressing". I also squeeze a little extra lime juice on top for good measure!

    Wow does that look good! I really enjoy taco salad, add some turkey and that is heaven!

    We’re making tacos tonight, and I just may use the leftovers for this amazing looking salad! Have fun in Boca!
