Mixed Berry Mojito

Hey everyone! It’s Friday, and you know what that means: Cocktail Friday! I am up in Hot-lanta with some fabulous foodies enjoying the #BlogHerFood Conference (Re-Caps to come!). While I’m out, enjoy this recipe courtesy of the hubs. Oh, and on a side-note stop on by where we are featured as the Cocktail blog of the day (WHAT an honor!).  **OOPS, Wrong date- that would be TOMORROW – check back** Happy Friday!

Hello again and happy Friday friends. Ok, for all of you who are still experiencing chilly temperatures, I am not bragging or complaining, but it is HOT in south Florida.  From the time I wake up and walk the dogs to the time I kiss Tina goodnight, I am wiping off a sweat mustache.  We love the heat down here and I wouldn’t have it any other way.  It makes every trip to the beach or lake or pool a reason to spin around in the water like a hard boiled egg.  But have you ever wondered how people in Florida deal with the heat and the humidity if they’re not partaking in some water sport or activity?  How do they entertain and sit outdoors for hours?  How how they not melt? How do those guys on CSI Miami wear suit jackets and chase bad guys in those temperatures? I’ll give one word… mojito!

The mojito is a brilliant Cuban concoction and the favorite of Ernest Hemmingway (an avid outsdoorsman).  Every sip is so refreshing and thirst quenching.  It is one of those drinks you can enjoy all day long.  The freshness of the mint and lime and the hints of sweetness from the rum and simple syrup marry perfectly and make you forget about the blazing heat.  I wanted to connect this drink with the flavors of spring so thought mixed berries would fit right in.  They’re both sweet and tart and they compliment the amazing flavor of the mojito as well as give it a beautiful hue that is reminisecent of a gorgeous Florida sunset.

Summer is here and it’s time to play outside.  I hope you enjoy this drink in the great outdoors.  Bring it with you to a Memorial Day picnic (the color scheme is both festive and appropriate).  Throw on your Bermuda shorts and Hawaiian print shirt and mix up a few of these for you and your friends.

Mixed Berry Mojito

Mixed Berry Puree
1 cup blueberries, whole
1 cup strawberries, caps removed and rough chopped

Mixed Berry Mojito
4 oz club soda
2 ½ oz light rum
1 ½ fresh lime juice
1 oz simple syrup
2 TBS mixed berry puree
6-8 mint leaves
½ strawberry, cap removed and sliced thin for garnish (optional)
5-6 blueberries, whole for garnish (optional)
1 small mint sprig, for garnish (optional)

Mixed Berry Puree
Combine berries and blend until smooth (food processor, blender, hand blender, etc.; really what ever is easiest to clean)
Pour puree into a fine strainer over a container and press puree through the strainer with a spatula to remove seeds and skins from puree. Store puree in the refrigerator.

Mixed Berry Mojito
In a tall (Collins) glass, combine mint leaves, lime juice and simple syrup and gently muddle together (only bruise the leaves, not shred). Add ice (about 1 cup) and pour in rum and club soda. Spoon berry puree into drink and stir to incorporate all ingredients and lift mint leaves up from the bottom of the glass. Top with sliced strawberries, blueberries and mint sprig.

Not usually a fan of mint unless it’s gum/toothpaste/mouthwash, but this sounds irresistible.!
