Frozen Strawberry Mojito

We made it to another Friday! Hooray! The hubs is here with his “Cocktail Friday” post, and let me tell you, friends… this drink is EASILY in my top 5 favs:

Happy Happy Friday, foodie friends.  I so glad it’s that time again; time to bring you another delightful, cold sipper to help combat this ridiculous heat.

When it comes to cocktails, I’ll try anything.  ANYTHING.  I wander through the aisles of Total Wine dreaming up crazy recipes and I’ll try any libation offered to me.  Tina, on the other hand, plays it pretty conservatively.  At the core, she really prefers just two drinks; the margarita and the mojito.  She’ll sample any fruit flavored cocktail, as long as it’s either a margarita or a mojito.  Every week, we talk about different cocktail recipe conceptions.  I conjure exotic spins on old classics (that are usually very masculine and boozey) and Tina reels me back in with more sensible ideas of group favorites.  Since I don’t want to drink alone on Cocktail Fridays, I indulge her ideas.  And you who what, they are always winners.

So without further ado and at the request of my sweet wife, I bring you the Frozen Strawberry Mojito.  This wonderful, icy version is like a grown up slushy.  It’s so fresh with the mint and lime and the strawberries and simple syrup offer a perfect mix of bright, sweet and tart flavor.  Usually, I find frozen drinks filling but this little beauty is super refreshing and light.  Plus, it’s so easy to make.  No straining, no shaking, no muddling; the blender gets to do all the heavy lifting and you get to enjoy the “fruits” of its labor.

Frozen Strawberry Mojito

The recipe yields 2 drinks and is lightly alcoholic. Tina does not like her drinks super boozey so feel free to add a little more of the good stuff to usher in the weekend.

Ingredients:

1 ½ - 2 cups crushed ice
1 cup frozen strawberries
3 - 4 oz rum
2 oz club soda
2 oz simple syrup
1 ½ oz lime juice
10 mint leaves, reserving the mint sprig and few leaves at the tip

Directions:

Combine strawberries, mint leaves and liquid ingredients into the blender and puree until smooth. Add in ice, starting with 1 ½ cups and blend until desired consistency, adding ice as necessary. Pour drink into tall glass and garnish with mint spring.

    Wow, another great drink to enjoy tonight. Thanks for the great ideas! Sort of off topic question… What kind of blender do you have. Ours is only about 5 years old and rarely used (until cocktail Friday’s started anyway) but sounds like I’m mixing car parts in it when it’s turned on. Need to get out and get a new one this weekend but wanted to know of a decent one. Thaks!
