Hey there! See, I told you I’d be back with some recipes this week! 😉 We are slowly but surely getting back into our “normal” routine. Thanks again to everyone for their kind words and prayers that we have continually received. We are SO thankful.

Anyhow, back. to. the. food. This recipe, my friends, is a GOOD one. I can’t actually take credit for this, as it’s really a Hubs’ concoction (I just put a few finishing touches on it).

We made this to top our coconut plantain crusted fish last night (Recipe coming TOMORROW… and trust me, you will want to come back for this one!!). MAN let me tell you, it was heav-en-ly.

Double this recipe… you’ll want to dip your chips in it, top your fish with it, top your chicken with it, or just stick your spoon right in it! hah Seriously though.

Mango Kiwi Salsa

Yield: 2 cups

Prep Time: 10-15 minutes

Total Time: 10-15 minutes


1 mango, diced (about 3/4-1 cup)
1 kiwi, diced (about 1/3 cup)
1/2 cup diced red onion
1/4 cup diced red pepper
2 tablespoon chopped cilantro
1 tablespoon diced jalapeno (seeds and ribs removed)
2 teaspoon lime juice
1 pinch salt


Mix ingredients together. Serve with chips or on top of fish, or chicken, Delicious!
