Bacon Cheddar Broccoli Salad
Happy Saturday! So sorry I’ve been MIA the past few days – to make up for it, I’m going to give you a recipe PLUS the hubs will also post his delayed cocktail Friday post! It’s 2-for-1 around here today! 🙂
Okay, Broccoli happens to be my #1 favorite veggie. Roasted, steamed, or sauteed… count me in. In soup or salad? Yes please. I’ll eat it any way.
Now, I know not everyone is a fan of broccoli, but if something’s going to make you enjoy it in the slightest – this has GOT to be the dish. Smothered with salty crispy bacon, freshly shredded cheddar cheese, onion (you can hold the onion if you’re not a fan), and a sweet and tangy dressing. YUM.
This recipe is something my mom has made for YEARS. I’m sure many of you have a recipe similar recipe to it! It’s one of those easy-peasy throw together things. Perfect for a barbecue side dish, a potluck, or to just eat by itself when your hubby is working late (not that I’ve done THAT before…)  😉
Anyhow, I know summer is almost over, and barbecues are phasing out… so get on it – make this dish before it’s too late!

Bacon Cheddar Broccoli Salad
Yield: 4-6 servings
Prep Time: 10 minutes
Total Time: 10 minutes
Recipe doubles well for a large crowd!
Ingredients:
For the Dressing:
1 cup mayonnaise
1/2 cup sugar
2 tablespoons vinegarFor the Broccoli Salad:
1 stalk of broccoli, cut into bite-sized pieces
1/2 pound of bacon, cooked crispy and chopped
4 ounces cheddar cheese, shredded
1/2 small red onion, finely dicedDirections:
For the Dressing:
Mix together all ingredients and refrigerate until ready to use.For the Broccoli Salad:
Add broccoli, bacon, onion, and cheddar cheese into a large bowl. Toss with dressing and serve chilled. Great for a picnic, barbeque, or potluck!

Mmm, I love broccoli salads! I make one with bacon, crasins and sunflower seeds, but yours sounds good too. How can you go wrong with bacon AND cheese? 🙂

Yummmmm! Hubs and I are trying to lose weight and have been following low-carb, minus the sugar in this recipe (which I could easily substitute with Splenda) and we have a winner…I am totally making this. Thanks for the inspiration!

This is a great recipe! You rock. I have a vegetarian daughter so I’ll just omit the bacon on hers and she will love it. My first trip to this site and I can tell you are a cook after my own heart.

I make this with sunflower seeds added too and leave out the onions. You can also make it noodles and add more dressing for broccoli cheddar pasta salad.

I’ve made this salad for years. Low fat Mayo and turkey bacon can cut some calories too! Delicious!
