Ya’ll KNOW how I feel about Brie cheese (Exhibit A, , C, and D)! Yes, I L-O-V-E it. For real.

So, I made (& posted about) this salad about two years back (Excuse the “i had no idea what White Balance was” photos… SHUDDER) haha.

I love looking back at where I started on this little ol’ blog and see the change from then to now… From 2 line posts with small orangey photos to now. WHAT a difference. It’s a great reminder that everyone starts somewhere!

I know I still have a LONG way to go/grow, but I can’t wait to see what another 2 years brings!! 🙂

Anyhow, back to the salad. This is one of my favorite spring/summer salads and I thought it deserved a re-post (with a homemade dressing recipe of course!).

Strawberry season is in full bloom down here in Florida, and will be soon in other states (so dog ear this salad for when that time comes for you!).

The sweet strawberries, creamy brie, crunchy almonds, and tangy dressing work. so. well. together. I’m a big fan combining different flavors/textures!

Now, you KNOW the hubs can’t consider anything a meal unless there is some sort of meat involved hah! One of my FAVORITE quick tips is to buy a cooked rotisserie chicken at the grocery store, chop it up, add it to the salad to beef it up a bit & call it a meal.

This dinner took literally 15 minutes TOPS to throw together with it’s simple 5 ingredient dressing and a little chopping! I’ll call that a WIN.

Simple Strawberry Brie Salad with Poppyseed Dressing

Yield: 3-4 servings

Prep Time: 15 minutes

Total Time: 15 minutes


For the Poppy Seed Dressing:
1/3 cup apple cider vinegar
1/2 cup + 1 tablespoon sugar
1 1/2 teaspoons poppy seeds
1 teaspoon dry mustard
1/2 cup oil (I used olive oil)
1/2 teaspoon black pepper (optional)

For the Salad:
1 heads Romaine lettuce, chopped
3/4 - 1 cup sliced strawberries
4 ounces brie cheese, rind removed and cubed
1/2 cup sliced almonds
grilled chicken, optional


For the Poppy Seed Dressing:
Whisk together vinegar, sugar, poppy seeds and dry mustard in a bowl until well combined. Slowly drizzle in oil, whisking to incorporate. Set aside until ready to use.

For the Salad:
Build salad and toss with desired amount of dressing. Add chicken to make into a hearty main course!
