Bacon Avocado Chicken Club with Garlic-Basil Mayo


You. guys.

This. sandwich.

This is the sandwich that dreams are made of (Yah, that made way more sense in my head)!

But, seriously. If I was Oprah, this would be dubbed my “favorite things” sandwich… and you would all be getting one! haha

Umm hello: Grilled chicken, melted creamy swiss cheese, crispy salty bacon, cool & creamy avocado, Garlic Basil Mayo (OH MAN!), and a little lettuce, tomato, and red onion = best sandwich of. my. life.

It’s a club sandwich taken way up to the next level… The garlic basil mayo takes it out. of. the. park. 

This sandwich is my at-home take on old favorite from the Cheesecake Factory. I LOVE re-creating restaurant dishes at home! It’s cheaper, you can tweak the flavors to your preference & you know exactly what is going on your plate!

Win. Win. Win.

Okay, seriously guys, GO MAKE THIS SANDWICH. I’m seriously considering making it again for tonight’s dinner. Yes, it was that good.

Bacon Avocado Chicken Club with Garlic Basil Mayo

Yield: 4 sandwiches

Prep Time: 15-20 minutes

Cook Time: 20 minutes

Total Time: 35-40 minutes

Hands down, my favorite sandwich EVER (it will be TOUGH to beat!)!

Ingredients:

For the Garlic-Basil Mayo:
1/2 cup mayonnaise
3 garlic cloves, grated
6 basil leaves, chopped
pinch of salt
pinch of black pepper

For the Sandwiches:
3-4 chicken breasts (depending on how much meat you want on each sandwich)
8 thick slices of bread of choice
4 slices of swiss cheese
8 slices bacon, cooked crispy
2 avocados, pitted and sliced
1 tomato, thinly sliced
1/2 red onion, thinly sliced
lettuce

Directions:

For the Garlic-Basil Mayo:
Mix ingredients together and set aside until ready to use.

For the Sandwiches:
Season chicken with spices of choice (I just dashed on a little salt, pepper, and garlic powder). Grill over medium heat until cooked through and the juices run clear (6-9 minutes per side, may vary depending on size of chicken breasts). Remove from grill and allow to rest for 5 minutes before slicing.

While chicken is resting, preheat the broiler in your oven. Also, toast all 8 slices of bread and spread about 1 tablespoons of garlic basil mayo on 4 of the slices of bread. Place them (mayo side up) on a baking sheet.

Slice the chicken breasts and layer evenly amongst the 4 prepared slices of bread. Top each one with a slice of swiss cheese and place under the broiler just long enogh to melt the cheese (should only take about a minute).

Remove from oven and top each with one with 2 slices of bacon, and a few slices of avocado. On the other 4 slices of toasted bread: add additional garlic herb mayo, lettuce, tomato, and red onion and then place the 2 halves together. Slice on a diagonal (you can place a toothpick in each half to hold them together) and serve hot!

    I just ate dinner but am seriously hungry again just reading this post. I think clubs are a phenomenal thing because it’s basically just stacking a mile-high sandwich and throwing bacon on top. How is that ever a bad idea?

      i just used white bread from the deli section, but you can use anything… sourdough, italian, etc…

      it should be good for 1-3 days in the refrigerator in an airtight container… it doesn’t last THAT long b/c of the fresh herbs

    Amazing sandwich! I made it with dried herbs and used the mayo on a turkey sandwich. I had all the ingredients except fresh herbs. Still great! Used portugese sweet bread I had on hand…very good too. Great use for leftover bacon from a brunch I did on Sunday! Thanks loved it!
