Loaded Buffalo Blue Cheese Fries

I have MAJOR love for all things buffalo flavored! But these, my friends might be my favorite buffalo creation, yet!  Alexia Waffle fries topped with buffalo shredded chicken, colby jack cheese, & blue cheese then melted until ooey and gooey… then topped with an extra drizzle of buffalo sauce & some ranch dressing (or blue cheese dressing if you prefer)…

PARTY. IN. YOUR. MOUTH.

Tell me this doesn’t just SCREAM “GAME DAY!!!!” I mean everyone serves some sort of buffalo dish for game day: buffalo wings, buffalo chicken dip, buffalo chicken pizza, buffalo chicken quesadillas… and now THESE little bites of goodness.

You’re man-friends will love you. Hubs couldn’t even speak, he was shoveling these in his face so fast!

Total side note, but why is it that my husband can eat food like this and have it go straight to his muscles?! My buffalo chicken fries like to head straight for the thighs… not. cool.

Loaded Buffalo Blue Cheese Fries

An easy game day treat that'll knock your socks off... PARTY. IN. YOUR. MOUTH!

Ingredients:

1 family size bag of Alexia Waffle Fries
2 cups warm shredded cooked chicken (about 2 chicken breasts)*
1 cup favorite bottled buffalo wing sauce (plus additional for drizzling)
4 ounces shredded colby jack cheese
2-3 ounces crumbled blue cheese

Ranch or Blue Cheese dressing for serving

*You can boil or bake the chicken breasts & then shred - or buy a rotisserie chicken to make it extra easy!

Directions:

Preheat oven to 400°F and place Alexia waffle fries in an even layer on a baking sheet (being sure they do not overlap). Bake until fries are nice and crispy (I like to cook mine a little longer than bag recommends for some extra crunch-factor).

While fries are cooking, toss the shredded chicken with the buffalo sauce and season with a little salt if needed. When fries are cooked and crispy, layer half of them on an oven safe serving platter and top with half of the chicken and 1/3-1/2 of the cheeses. Add the remaining fries and repeat. Place in oven until cheeses are good and melted (should only take a few minutes). Remove from oven and drizzle with buffalo sauce and ranch (or blue cheese) dressing.

Serve with carrot & celery sticks and a side of dressing of choice!

    I recently tried Alexia’s Waffle Fries — sooo good on their own, but with buffalo chicken and blue cheese?! These are over the top, I love it.

    And you’ve gotta love the science of lady-calories vs man-calories. They’re like bottomless pits, men are!

    Dam girl now those are some French Fries!! I want them in my life! I love nothing more then spicy Buffalo Wings and putting them on waffle fries is genius!!! I wonder of it would be ok to have this for breakfast?

    I luv everything buffalo too! Have to try this ASAP! I’m a big fan of Alexia fries too! But usually I just put them in the other shelf of the oven while the steaks are half done (and dinner is easily done)! I’ve never seen the waffle shaped at the market though but I’m sure this recipe would work just as well with the other Alexia regular fries 🙂
