Bacon makes everything better… Am I right?

Yes, I totally am.

Anyhow, my dear grams is in town visiting from Ohio for a week! Grams is a Horrigan (if you couldn’t guess… that’s an IRISH last name ;)). One of my old co-workers is from Dublin and still carries her lovely thick Irish accent. Whenever grams is in town, we try to get together with Philomena as Grams just LOVES to hear her talk! She reminds her of her father who was very proud of his Irish heritage!

So Philomena came over on her lunch break on Friday and we ate these delicious chicken sandwiches as us 3 Irish gals sat and chatted away (it’s what we do best!)!

This is one of the most simple combinations to put together but the flavors go great! You get sweetness from the honey mustard, smokiness & saltiness from the bacon, crisp cool lettuce, tomato, and onion, and of course some salty cheesy goodness to top it all off!

Absolutely SCRUMDEEDLIUMTIOUS!

Chicken Bacon Club with Honey Mustard

Yield: 4 servings

A quick and easy dinner that the kids will love too! Who doesn't love bacon?

Ingredients:

4 boneless skinless chicken breasts
1/4 cup honey mustard dressing (plus additional for serving)
4 slices colby jack cheese
6 slices bacon, halved & cooked* (you'll end up with 12 short slices)
1 tomato, sliced
1/2 red onion, peeled and sliced
mixed greens

*I cook my bacon on a sheet pan at 400ºF until nice and crispy (it helps the bacon stay flat and not shrivel up too bad). I do this step ahead of time!

Directions:

Preheat grill (or grill pan) to medium high heat. Season chicken breasts with a pinch of salt and pepper on both sides. Spray grill with a little non-stick cooking spray and add chicken breasts on and grill until cooked through (a minimum of 167ºF - roughly 8 minutes per side). When chicken is cooked through, brush each chicken breast with a little honey mustard, add 3 slices of bacon to each chicken breast and top with a nice slice of colby jack cheese. Close grill lid and heat until cheese is melted (if using a grill pan, cover with a metal bowl to create steam).

Remove chicken breasts from grill and build sandwiches on the whole wheat buns. Each sandwich should have chicken, a drizzle of honey mustard, a slice of red onion, a slice of tomato, and some mixed greens. Serve with some kettle chips and a pickle (or some oven fries).
